The San Andreas PS2 ISO, played via PCSX2 with a 60 FPS patch and a decent CRT shader, is the single best way to experience the story of Carl Johnson. It retains the soul (the orange skies, the pop-in that adds tension, the glitchy jetpack) that modern remasters sandblasted away.
